Baked as you suggested. Sprinkled with lemon and browned under broiler. It was delicious. Per your ideas, I grated the zest of one lemon into the breadcrumb topping and that was awesome.
The whole family loved the fish. Had enough left over and gave some to our neighbor and he loved it too! I went the Ritz cracker route. Used 2 small pieces of Cobia on one side of the pan and asparagus drizzled with olive oil and minced garlic on the other. Any tips for cooking on a grill rather than in the oven?
Thinking the same recipe but using a foil pan? Yes I would just use a foil pan or foil boat, leaving the top uncovered so the breadcrumbs get crispy! Does not specify to do one or both sides of fish. Fish fell apart when handling. I threw the whole thing away and went out for fish. I swear, brown butter takes a simple piece of fish from good to gourmet. Serve with your favorite green veggie or salad and dinner is complete! This fabulous dinner can be all yours without much time, attention or clean up.

I was a bit intimidated by the preparation of the brown butter. Preparing the brown butter was a cinch! That Brown butter sauce is delicious!! Made this recipe with rice.
I plated the haddock on top of the rice and drizzled the brown butter on top. Made a great sauce for both the fish and the rice!!! This was excellent. Last time I cooked my haddock in a lemon sauce and while I enjoyed it, my family was fussing. So this is why I went looking for a different flavor. I didnt even know brown butter was such a thing…I was picturing brown sugar mixed with butter haha…but wow!!! So glad you enjoyed the recipe Shari!
